- Ability to work, lead and manage a team of over 100 chefs
Our client is managing a very well-known high-caliber hotel in Ayers Rock. We are now searching for highly knowledgeable and well-trained Executive Sous Chef to lead the kitchen services (along with the Executive Chef) which serves the most discerning clientele. The candidate MUST have worked with award-winning 5 star hotels or resorts.
As the Executive Sous Chef, you must have exclusive knowledge of presentation and must be able to maintain a high degree of quality. While some customers may opt for particular food requirements, you must train your staff to fulfill such requests.
Key Attributes:
- Must have signature dining experience
- Must have at least 5-7 years in managing exclusive multiple F&B outlets and simultaneously manage several events and functions
- Exceptional knowledge of modern Australian, and seasonal cuisine using local fresh produce
- Work closely with the Front of House team and management to develop new menus and promotions
- Candidate MUST have strong knowledge of administering rosters, COGs, stock takes, recipe cards and tight cost control
- Able to lead and motivate staff size in excess of 100
- "Eagle-eyed" attention to details
- Candidate should be well-versed in Public Relations
- Able to implement policies, procedures and HACCP standards
- Create eclectic menus and work out various promotions
- Excellent communication skills in English
- Computer literate
- Greet customers and explain them about the cuisine
- Have immense passion for maintaining high quality of food with exceptional presentation skills
