  • Remain fully in-charge of the food and beverage activities and guest requirements whilst managing a very busy 7 days operation with more than 20 chefs in the kitchen for lunch and dinner services

Our client is managing a very well-known and highly busy Texas style casual dining restaurant in the heart of Melbourne and is presently searching for a Chef de Cuisine to manage the overall kitchen activities. The candidate is supposed to oversee the activities of the kitchen with a team of over 20 chefs. The candidate will be responsible to lead the 7 days operation for lunch and dinner services.

The ideal candidate will have a very strong working background within a multicultural environment and be responsible for budgets and cost control, recruitment and development of the kitchen team, HACCP Health and Hygiene monitoring and maintenance as well as remain highly creative in designing eclectic menus. Candidate MUST have exceptional experience of Texas style cuisine and must be passionate about using local produce.

Key Attributes:

  • Experience in working with signature and fine-dining venues serving modern and traditional Asian/Western cuisines
  • Able to develop new menus regularly and train a medium-sized team
  • Extensive knowledge of modern and traditional Asian/Western cuisines
  • Manage outdoor catering and functions
  • Provide supervision, training, direction and leadership to all kitchen staff
  • Ensure smooth operation in the kitchen areas
  • Monitor all the food preparation
  • Should be in control of purchasing, receiving and storing
  • Ensure the highest level of food safety and security
  • Must have excellent communication skills in English
  • Should be HACCP certified
